The only books I can think of for the moment are these:

1."Art contemporain et lien social" Claire Moulène , 2006, editions cercle d'art, (but it is maybe not as precise as what you need. It talks about projects that create a social form (lien social in french) by artists such as Thomas Hirschhorn, Tiravanija (obviously), Gianni Motti, Francis Alys, Jeremy Deller, AAA Corp etc

2. "Magic moments-collaboration between artists and young people" Anna Harding, Black Dog publishing 2005 which talks more about evaluating the importance of art as an instrument of social change
